"Good, could be better" 2010-07-07
By Nathan Ledbetter
I found the Kyocera ceramic knives a while back, and absolutely enjoyed their 5.5" revolution series santoku; and was exepcting the same excellent product with the adjustable slicer here.
There was some minor disappointment with it. The blade is excellent, of course; however the "ADJUSTABLE" part and the ramp before the blade leaves a little to be desired. It's a very simple design, an adjustable square tube with varying heights that the ramp rests on for thickness. But changing its position does not have a locking feature to keep it from further rotating while in use and thus changing your slicing thickness in the middle of a veggie.
The ramp is also loose and flops around quite a bit, moving above where you would expect, held on by only a reduced cross-section of plastic, that will undoubtedly break off after repeated use, handling, cleaning, and storage.
Another drawback is the length of the ramp before the blade. The overall length of the slicer is great, but they could have put the blade much further down, allowing for larger veggies and such to fit, or fit better length-wise instead of always having to use it mostly perpendicular to the veggie. The white plastic hand/finger guard is also of poor fit and finish, and doesn't slide very well along the ramp. Adding a little veggie/olive oil helps this, but complicates holding the handle, and it slips out of a grip.
Overall, I would recommend this product on two counts; like the price, and excellent blade.
It looses points for the blade location, ramp length, adjustable feature (floppy ramp, loose adjustability), and cheezy finger guard (just chuck-it and be very careful and use it only for the last few slices of something).
If I were to do it over, buy the FIXED thickness style.
